Ingredients:
1 kg chicken, cut into serving pieces
1 medium-sized green papaya, sliced
1 bunch of fresh spinach or chili leaves
1 thumb-sized ginger, sliced into strips
1 medium onion, chopped
5 cloves of garlic, minced
4 cups water
2 tablespoons fish sauce
Salt and pepper to taste
2 tablespoons cooking oil
Procedure:
- Heat the cooking oil in a large pot over medium heat.
- Sauté the garlic, onion, and ginger until fragrant and the onion becomes translucent.
- Add the chicken pieces and cook until they are lightly browned.
- Pour in the fish sauce and continue to cook for another 2 minutes.
- Add the water and bring to a boil. Lower the heat and let it simmer for about 20 minutes or until the chicken is tender.
- Add the green papaya slices and cook for another 5-7 minutes until the papaya is tender.
- Season with salt and pepper to taste.
- Add the spinach or chili leaves and simmer for another 2 minutes.
- Serve hot with steamed rice.
