Ingredients:

1 kg chicken, cut into serving pieces

1 medium-sized green papaya, sliced

1 bunch of fresh spinach or chili leaves

1 thumb-sized ginger, sliced into strips

1 medium onion, chopped

5 cloves of garlic, minced

4 cups water

2 tablespoons fish sauce

Salt and pepper to taste

2 tablespoons cooking oil

 

Procedure:

  1. Heat the cooking oil in a large pot over medium heat.
  2. Sauté the garlic, onion, and ginger until fragrant and the onion becomes translucent.
  3. Add the chicken pieces and cook until they are lightly browned.
  4. Pour in the fish sauce and continue to cook for another 2 minutes.
  5. Add the water and bring to a boil. Lower the heat and let it simmer for about 20 minutes or until the chicken is tender.
  6. Add the green papaya slices and cook for another 5-7 minutes until the papaya is tender.
  7. Season with salt and pepper to taste.
  8. Add the spinach or chili leaves and simmer for another 2 minutes.
  9. Serve hot with steamed rice.
